    Robert Mondavi's portion of the historic To Kalon property in Oakville provides over 90% of the fruit for their flagship Cabernet bottling. Director of Winemaking, Genevieve Jannssens, helped implement the recent To Kalon Project, Mondavi's first major renovation since it was founded in 1966. As part of the project, the winery developed the new To Kalon fermentation cellar, which enables Mondavi to make the Napa Valley Cabernet Sauvignon Reserve and Oakville District Cabernet Sauvignon in a winemaking facility equal to its surrounding historic To Kalon vineyard. The premium fruit from To Kalon produces a wine yielding deep aromas of cassis and graphite lead with flavors of ripe blackberry and subtle earthy notes. The suave power of this wine is supported by the firm, yet ripe and well-integrated tannins. Although, drinkable now for those who enjoy big Cabs, this wine will continue to improve in the bottle for some time.
