Dark garnet in the glass, this wine is highly aromatic with notes of ripe black cherry, anise, licorice, shaved dark chocolate, rosemary and charred meat. The entry is immense with bright raspberries and fresh cherries, transitioning to a mid-palate of amaretto, sandalwood and hints of high mountain forest and coastal scrub. Textured tannins and notes of toasted coconut round out the palate as the wine finishes with lingering sweet oak.
I opened prematurely on vacation and did not have a decanter. It had significant depth but over three days I couldn’t get it opened up. Likely I missed tasting notes somewhere that suggested something other than “drink now.”
The owner was walking with his daughter who kept saying "Papillon" which means butterflies in French which is why there is a butterfly at the bottom.
