(NV Vintage) Made by Patrick Piuze one of Chablis's rising stars, this Sparkling Bourgogne is as dry and crisp as you would expect. It is sourced from vines over 25 years of age in a vineyard planted on limestone and clay soils. All the grapes are hand harvested and it is fermented and aged in stainless steel tanks before undergoing secondary fermentation. It then spends 9 months on the lees before it is disgorged and no dosage is added. This sparkler is loaded with chalky minerality and has a bright snappy style that makes it a perfect aperitif bubbly.
Dry and broad-shouldered, but with a sneaky thread of sweet chardonnay fruit running through the center. Nicely balanced, well-proportioned. Lacks the poise, finesse, and complexity of a good champagne, but the best $20 fizz I've tried. Would buy more.
