(NV Vintage) This rich Champagne offers notes of roasted hazelnut, brioche and smoke, layered with vibrant acidity and a fine mousse to create an overall sense of finesse. The bright hints of black currant, poached quince, pickled ginger and licorice are fresh and juicy, lingering on the finish.
(NV Vintage) Brut Souverain is made up of a balanced proportion of Chardonnay, in the majority from the Côte des Blancs, and Pinot Noir, mostly from the Montagne de Reims. Pinot Meunier adds a delicate fruity note. More than 25 crus are assembled, including the following village: Mesnil sur Oger, Oger, Avize, Cramant, Chouilly, Aÿ, Verzy, Verzenay, Beaumont, Sillery, Mailly Champagne. The composition of Brut Souverain changes from year to year to take account of climate variations and to perpetuate House style. Brut Souverain is composed of 20% reserve wines.
BONE DRY. Recommended instead of my usual, Veuve Clicquot. Bright, crisp apple. Enjoy in Autumn and Winter Ice Cold. Perfect by itself but also hearty enough to serve with Bolognese strangely enough.

Wine & Spirits(NV Vintage) Light yellow with a delicate bead. Smoky pear, quince and orange on the nose, with faint yeastiness adding depth. Brisk and dry, displaying finely etched orchard fruit flavors and a jolt of bitter lime zest on the back end. The clean, focused, firm finish repeats the smoky note. I like this wine's finesse.
