Expect aromas of rose petals, and a palate of spring's first strawberries, cherry blossoms, and just a hint of hay in a sun-drenched summer field. This rose shows a complex and elegant palate of red berries with underpinnings of licorice, guava, and filo pastry, all supported by a wonderfully slaty acidity and a delicate, yet persistent mousse.
It’s a classic blend of Pinot Noir (75%), Pinot Meunier (15%) and Chardonnay, picked in late September at 19.5 Brix, and given just enough skin contact to create a light peach color. Aromas of dried strawberry, juicy cherry, watermelon and fresh-baked bread lead to bone-dry and bright bubbles. Red currant, cherry and rhubarb flavors are carried a long way by sweet herbs and dried strawberry.
