The grapes for our 2008 Pinot Noir were harvested between August 16th and September 5th with an average brix of 25.9. After fermenting on the skins for 6-9 days, the must was pressed and the resulting wine finished fermentation in Stainless Steel tanks. The wine then received the equivalent of approximately 6 months of aging in French Oak barrels.
Said to have raspberry flavors but has more of the smell that raspberries taste like. Strong acidic flavors that start with black cherries and end with a bit of pepper
