(2006 Vintage) The grapes are pressed whole cluster into the fermentor, chilled overnight at 38 degrees. The juice is racked and inoculated with yeast QA 23. The juice was fermented at a cold temperature (55 degrees) for 12 hours and then racked into French Oak barrels to finish the fermentation procress. The grapes for this wine come from a two acre block selected and maintained to allow the grapes to ripen fully.
