Winemaker's Notes

French for star -- étoile represents our commitment to a classically crafted apéritif style that personifies elegance and grace. This prestige cuvée is designed to achieve a seamlessness and balance that can only be realized by selecting the finest fruit from our cool and cold climate vineyard sites. Resting in the bottle sur lees- on yeast- for a minimum of five years, the wine evolves, building layers of depth, complexity, and harmony while retaining texture and vibrancy. Enjoy étoile upon release or for years to come.

Yeasty, toasty and even sporting a bit of a baked brioche note in its first impression with steely and chalky notes providing a good sense of range and green apple fruit hints adding energy and balance, this wine is fitted with a strong stream of small bubbles and a tight, firm palate impression. Its richness and its suggestions of an aged character lift it above much of its price competition from both sides of the Atlantic and will earn it an enthusiastic following.
