But, wines like this snappy young white from one of the Niagara Peninsula's leading Riesling producers are undeniably delicious and surprisingly food- friendly. Made by halting fermentation early, just before all grape sugar is converted to alcohol, this German-inspired style retains a pleasing touch of sweetness that can be a sommelier's lifesaver with the most difficult dishes to pair – namely those that are overtly sweetened themselves or that feature a prominent kick of spicy heat.
