Winemaker's Notes

Grapes are harvested at full maturity and pressed followed by a cool settling. Initial fermentation at a cool temperature (18°C/64°F) begins in stainless steel and then is transferred to French oak barrels for completion. The wine remains in these 2-to-3 year old barrels for 6 months prior to bottling.
