In the cool climate of the Russian River Valley, our Cabernet Franc ripens very slowly. We picked on November 6, long after most of the other grapes in Sonoma County were harvested. This very long ‘hang time’ allowed the grapes to develop wonderful dark fruit flavors and aromas. These flavors were concentrated by the low yield of only 2.7 tons per acre. In keeping with our commitment to field blending, we harvested Merlot and Petit Verdot (complementary Bordeaux grapes) on the same day to add complexity to the wine. Under Alison Doran’s direction, the three varieties co-fermented for 20 days before pressing, including four days of extended maceration to soften the grape tannins, resulting in a flavorful and balanced wine. We pressed the wine to a carefully selected mix of European and American oak barrels. This mix of forests and coopers further enhanced the wine’s character. (hide)
