(2010 Vintage) A lively and racy yet creamy sparkling wine, produced in the traditional Champagne method from grapes from our top steep vineyards around Bernkastel-Kues. After maturing for 3 years on the yeast, this sparkling wine shows a rich character with lots of finesse and slightly nutty aromas. The extremely well integrated acidity makes this very complex sparkling wine also a delicious companion to food.

Luckily, it is not resting on this nor any of its other laurels. Today only sustainable agricultural practices are used in its 12 hectares of prime Mosel Valley vineyards, with no use of pesticides, herbicides (special herbs are planted to kill weeds), insecticides (use of pheromones instead), no chemical fertilizers (only mulch from pips, stems and skins of grapes) or heavy machinery which compacts the slaty soils with nearly all work done by hand. Environmentally-friendly practices extend to the cellar where there is no use of artificial enzymes, sorbic acid (commonly used to stabilize wine), industrial cleaners and only minimal use of sulphur dioxide. Bernkastel is the hub of the Middle Mosel. The Bernkasteler Badstub incorporates pure Riesling wines from two prestigious vineyards of the Thanisch Müller-Burggraef estate, the Graben and the Lay. 9.0%
