This Sauvignon Blanc displays aromas of guava and tropical fruit with a flinty minerality and a hint of cassis on the nose. The palate is rich and textured with concentrated tropical, pomegranate and mandarin flavours and a tight focused acidity, which draws out the palate for a lingering finish. After several months bottle age prior to release, this wine is enjoyable now, however the fruit concentration and firm acidity will ensure that it improves over the next five years.
After hand-sorting the fruit was whole-bunch pressed, fifty percent of the blend was fermented in tank using wild yeast and the remaining portion was transferred to seasoned French barriques and left to undergo fermentation with wild yeast. The wine was left on lees for four months following fermentation.
Wine & Spirits(From 2007 Vintage) Pale, green-tinged yellow. Captivating aromas of lemon, lime and crushed stone, lifted by violet and jasmine. Densely packed but vibrant and high-pitched, with superb intensity and lift to the floral and mineral flavors. Finishes long and gripping, with an impression of weightlessness. This makes the overwhelming majority of Marlborough sauvignons seem strictly commercial by comparison. A lot of wine for the price.
