Wine Description

(From 2014 Vintage) De-stalking and crushing of the grapes. Maceration at a controlled temperature (28-29° C), with selected yeasts in stainless steel vats for 7-8 days. After racking, the wine is left to mature for 6-8 months in the typical chestnut-wood barrels of Etna (capacity 30-130 hl) and then assembled and sent to the underground cellar to mature in stainless steel vats until bottling takes place in various periods after at least one year from the harvest. The wine has then matured in the bottle for at least 3 months.
