(2012 Vintage) Manual harvesting with double sorting in the vineyard , followed a third sorting at the winery , light pressing and selective destemming , fermentation traditional 25 to 40 days in stainless steel tanks and wooden vats under temperature controlled . Pneumatic pressing , malolactic fermentation systematic.
