Winemaker's Notes

(From 2010 Vintage) The harvest is entirely by hand. A severe selection is carried out on the vibrating sorting table at the entrance to the tank cellar; the grapes are pressed using pneumatic presses; the juice is then settled and racked by gravity and transferred to temperature regulated tanks; the wines are fermented at a temperature of approximately 18°C and did not undergo malolactic fermentation in order to maintain freshness and the acidity. Roussanne and Picardan are vinified and aged in wood.
