(From 1995 Vintage) Simi's Chardonnay is characterized in every vintage by this silky texture and well balanced concentration of fruit and oak that follow through for a long, smooth finish. It has special citrus and apple notes in the aroma, and a fruit delicacy enhanced by the subtle vanilla nuances of oak. At the winery, the fruit was quickly pressed off its skins, then 48% of the juice was barrel fermented in French oak and 52% stainless steel fermented.
