The 2007 Layer Cake Cab from winemaker Jayson Woodbridge is proof that you can have your cake and eat it too, layers and layers of it. A blend of cabernet fruit from a number of eastern Napa hillside vineyards, this is classically structured cab with a modern edge. Its perfume is redolent of blackberries, violets, pencil lead and tobacco. The blackberry fruit continues on the palate, mingling with sweet cherry, chocolate and coffee flavors.
(From «nv» Vintage) This wine offers generous aromas of ripe Bing cherries, blackberry, candied violets, cedar, and tobacco, plus hints of minerals and graphite. Sweet, densely packed and creamy in the mouth, but with firm, underlying structure that gives lift to the dark berry, chocolate, and coffee flavors. This is a very lush, soft, complex wine that coats the palate and spreads out on the long, lingering finish.
