(From 2011 Vintage) In the glass, the 2011 Cabernet is intense deep purple & concentrated blue. It has a nose overflowing with ripe raspberry, plum & blueberry – etched with nuances of spicy vanilla oak, the cedar of cigar boxes and creamy currant. The young wine asserts a foundation of crisp tannins and bright fruit promising rewards to those who wait a decade. To drink now, please “splash” decant and check the wine every 30 minutes or so until the youthful tannins soften up. Then enjoy flavors of ripened stone fruits gushing from the glass and pleasing the palate - invigorating with focused bright cherry, raspberry and layers of spicy vanilla framed with ripe plum. The lingering, lively cherry-skin finish satisfies those who drink this wine young while sealing a promise of its ageability.
(From 2008 Vintage) Like the 2007 vintage, the 2008 Vintage was a year of contrasts. Following a series of severe rainstorms, March and April gave way to the worst frost in over 31 years. Coombsville, historically one of the coolest growing regions in Napa Valley was not greatly affected by the frost. Cool weather continued though May and June, producing an unusually reduced and concentrated crop, which are all hallmarks of a great vintage. In July and August we observed a marked departure from an otherwise cool growing season, with temperatures soaring into the 100’s. The warm clear days that continued into an "Indian Summer” optimized grape maturation yielding a crop similar to the 2007, in terms of extract. While erratic weather patterns prevailed, reduced grape yields produced wines that are very well structured, concentrated & elegant wines.
Cork about 5 hours before dinner. Last hour was in the cellar at proper serving temp. DECANT Young wine with a nose of Eucalyptus and a hint of menthol and cocoa. more complex than the 05, but not as much backbone of the 06 a silky mouthfeel was not overbearing and flavors of black currant, baseball glove and old couch show the tannic nature of this wine. This wine is much more approachable young if you compare it to the previous 2 vintages . Wine will be even that much better in 5 plus years. This wine kept getting better and better and as too often the case, the last glass was the best. This young wine was slain for the team and it was a young one indeed. I will definitely wait a couple of years before the next one. HIGHLY RECOMMENDED A
