(2012 Vintage) The harvest was done by hand. The grapes were destemed and cold macerated at low temperatures for up to a week. Cold fermentation with selected yeast types and hand plunging followed to ensure gentle extraction. Medium red in colour. The nose shows sweet blueberry and plum aromas with a hint of wild thyme. Juicy plum and mulberry flavours are balanced by fresh acidity with rich mineral notes coming from red soils.
