Winemaker's Notes

Grapes for Sassello were harvested by hand October 8th-13th. The resulting wine is gently pressed after a 15-day maceration with delicate pumping over. The wine is aged for 18 months in French oak barrels (75% Allier – 25% Vosges: 228ltrs). After bottling, it is aged at the estate a further 6 months prior to release.
