(2015 Vintage) The fruit was machine harvested in cool evening conditions and pressed immediately, with minimal skin contact. After settling, the clear juice was fermented at very low temperatures with selected yeast strains to preserve the inherent varietal flavours. The wine was fermented entirely in stainless steel.
International Wine CellarBright, pale yellow. Slightly high-toned aromas of gooseberry, jalapeno and kiwi. Juicy and tactile, with pungent, rather uncompromising sauvignon flavors of citrus peel and pepper. The dusty finishing flavors of spice and jalapeno have real bite. Not for the fainthearted, but this rather extreme style of sauvignon does not lack for sweetness of fruit.
