(From «nv» Vintage) Fermentation lasts for 20-22 days with skin contact. Full malolactic fermentation occurs in the barrique along with regular fermentation followed by 12 months aging in Allier barriques. Total production of 11,000 bottles plus 300 magnum bottles.
