Wine Description

(2011 Vintage) Rocky volcanic-origin Rhyolite. L’Esprit des Pavots literally means “The Spirit of the Poppies.” This wine was grown in the original Les Pavots vineyard blocks that we completely replanted between 1996 and 1999 due to phylloxera. In replanting, we spared no expense, utilizing only the rarest and best clones of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. The 2009 vintage wine made from these young vine blocks captures the “spirit” of the Les Pavots terroir.

    (2005 Vintage) Full, deep ruby-red. Wilder aromas of plum, flint and smoky oak, with a cooler suggestion of menthol. Sweeter on first blush than the Pavots but with less depth to the flavors of cherry and brown spices. Finishes broad and rich, but with rougher tannins than the suaver flagship Bordeaux blend.

    (2002 Vintage) Deep ruby. Sexy aromas of black raspberry, mocha, black licorice and tarry oak. Superripe and sweet in the mouth, with somewhat medicinal flavors of black cherry, menthol and mocha. Finishes with huge, slightly tough tannins. This wine is from younger vines replanted in one part of the Pavots vineyard at higher density, using what winemaker Morlet described as a field selection of better clones.
