(From 2012 Vintage) A wine that surprises with a deep, ruby colour and full of blackberry and ripe currant aromas, complemented by subtle hints of black pepper and mint. Well-integrated oak completes a beautiful and complex aromatic profile. It’s loaded with flavours of cherries, blackberries, and ripe plums. Combined with hints of cedar and toast from the oak ageing, this wine is juicy, powerful, with a long, pleasant finish. It has ripe and soft tannins that give strong support and also soft and creamy texture. Cabernet Sauvignon vinification, cold soaking 24 hours between 15° - 18° C / 59° - 64° F, PDM yeast. Fermentation temperature 28° - 30° / 82° - 86° F, 3 pump – overs per day. Total skin contact 20 days.
