(From «nv» Vintage) The grapes are picked very early (early August) in order to produce a balanced, aromatic, fresh wine. The fruits are pressed directly in a pneumatic press. After the musts have settled under cold conditions fermentation takes place at low temperatures in order to conserve all the fruity aromas and freshness. Maturing is performed on the fine lees in order to preserve the aromatic character of the grape varieties.
