Winemaker's Notes

(From 2000 Vintage) Crémant offers a spicy, floral character which, over time, deepens into apricot, peach and nectarine aromas and flavors. The sweetness in Crémant is subtle, providing a fine balance with desserts such as fruit tarts, poached fruit, light cakes, custards, gingerbread, and crème brûlée. It also complements a wide range of spicy Asian foods.

    88% Flora; 10% Chardonnay; 2% Gewurztraminer. Anyone on the lookout for a sweeter bubbly would be well advised to give this one a look. It is nicely balanced, charged by a fine and long- lasting mousse and exhibits complexing, champenized accents of soy, vanilla and toasted bread sitting confidently atop its central candied apple fruit. It would work with many oriental dishes and also alongside a pear tart.
