Grown between 1,000 and 1,300 feet in the steep hills near Panzano, this gains definition with air, maintaining a fine tension between juicy flavors of red plum and wild strawberry, and the grainy, ferrous tannins. It grows more stylish, the texture becoming smooth and the flavors finely integrated. This will continue to develop for eight to ten years, although it's tempting to drink it now with a grilled bone-in pork chop.
