Winemaker's Notes

(From 2006 Vintage) Cullen’s 28 hectares of vineyards are located in the Margaret River, an area renowned for producing wines of character and depth. The grapes for this wine come from the subregion of Wilyabrup. Cullen Wines became the first carbon neutral winery and vineyard in Australia. The estate vineyard was certified Organic ‘A’ grade in 2003 and Biodynamic ‘A’ grade in 2004 by the Biological Farmers Association of Australia. Biodynamic techniques were used to produce the Chardonnay fruit, which ensures that the wine naturally reflects the vineyard characteristics. 70% of the wine was fermented read more...using wild yeasts. This component was matured for just five months in new French oak to ensure that, while oak still had an influence, it remained in the background. 30% of the wine was prevented from undergoing malolactic fermentation, which facilitates the retention of both freshness and natural acidity.
