(2011 Vintage) Origin: Grapes carefully selected from more than 20 year old vineyards within the boundaries of Olmedillo, Anguix and Villatuelda. We selected grapes that were well balanced and with small grain. Winemaking: The wine has undergone 15 days of maceration and has been fermented at controlled temperatura at 28 to 30 C. Afterwards, and once the wine has totally undergone malolactic fermentation, the wine has aged for 14 months in mew American oak barrels. Decanting were done every 4 months, in order to get more oxygenation and expressiveness. After the wine was taken out from the barrel, it has remained in the bottle for another 9 months.
