  • Connoisseurs' Guide to California Wines
    (1997 Vintage) 87% Cabernet Sauvignon; 11% Cabernet Franc; 1% Petit Verdot; 1% Malbec. Perhaps more properly labeled as "Four" rather than "Five" in its present version, Cain's prestige cuvee is a study in contrasts and earns high marks for its deep fruit, lavish oak and invitingly fleshy palatal feel. It is less laudable, however, for its persistent old bark and saddle-leather qualities, and it gets pushed just wide of recommendation by its abrupt, overtly drying finish.

    (1997 Vintage) Deep red-ruby color. Slightly reduced aromas of smoky currant, coffee liqueur, minerals and smoked meat. Big, sweet and deep, with lovely acidity giving the fruit a penetrating quality. Has the strong extract to buffer its firm structure. Good ripe black fruit flavors. Finishes with very fine, mounting tannins and subtle persistence. Complex and claret-like.

    (1996 Vintage) Ruby-red. Complex aromas of cassis, plum, black pepper, black olive and leather. Plush, pliant and seamless yet quite firm, with youthful flavors of cassis, plum and leather. Dense and solidly structured, with sound acidity. Finishes with dusty tannins and noteworthy persistence. Showing better than the bottle I tasted last year.
