(From 2012 Vintage) The destemmed grapes were lightly crushed and fermented in stainless steel tanks at a controlled temperature of 28º C. Maceration in contact with the grape skins for 15 days, pumping the juice over the cap of skins daily for maximum colour and aromatic extraction. Aged for 14 months in hybrid barrels (American oak staves and French oak heads) followed by 9 months of rounding in the bottle prior to release.
Tasting notes: Brilliant red cherry with violet hues. Elegant ageing aromas with fruity notes. It develops a good balance at the palate coming from the sweet and elegant tannins. Serving suggestions: Cold starters, pasta, poultry. Perfect as wine by glass
At ten years thus was a beautifully developed mix of ripe and cooked red fruit with soft tannins, vanilla and cigar box. It might have been just a little too soft but was still nicely balanced and very enjoyable. With food it seemed to brighten somewhat and was really delicious.
