Winemaker's Notes

(From 2005 Vintage) The Shirvington story started in 1996 when we, the Shirvington Family (Lynne, Paul and sons Tony and Mark), purchased 16 hectares of prime land in Willunga, South Australia. After extensive researching and touring of Australia’s major wine regions, this area was chosen for its ability to consistently produce outstanding table wines of great character and quality. Willunga is just south of McLaren Vale on the Fleurieu Peninsula, an area internationally renowned for its red wine. The Estate Cabernet Sauvignon was 100% barrel fermented and aged for 12 months in 75% new oak and 25% one year read more...old oak. 80% of the oak was American and 20% was French. The wine exhibits a deep, dense plum red colour. The intoxicating aromatics are evident as soon as the cork is pulled. There is a concentrated array of wild blackberries and fruits of the forest, intermingled with freshly ground cinnamon and nutmeg. The palate is equally as rich with juicy, sweet fruit, evolving into a silky, creamy mid palate. Fine emery tannins built into the wine give it structure and persistence, and combine with roasted coffee bean and dark chocolate to leave an enduring, luscious finish. It is drinking well now and will cellar for many years. (hide)
