This is Iron Horse's Blanc de Noirs, made from predominately Pinot Noir. It has a beautiful, pale-peach hue. Rich and creamy, like pure strawberries and cream, this is without doubt the most romantic of Iron Horse's Sparklings. Pair with a salad of frisee, a poached fram egg and thick cut bacon, a charcuterie and cheese platter featuring salumi and a triple creme, young goat and fresh ricotta cheese, or a spaghetti carbonara for something decadent.
