(From 2008 Vintage) GRAPE SOURCE: Sourced from premium vineyards within the Limestone Coast, with the majority coming from the Coonawarra and Padthaway regions. Mild to warm conditions during the ripening period produce berries with excellent color and optimum flavor.
VINIFICATION: The Limestone Coast Shiraz was fermented in both small, four-ton open fermenters and 35-ton Roto fermenters. Selected wine parcels then received extended maceration to enhance palate weight and tannin structure. The outstanding parcels were pressed off skins and finished fermentation in fine-grained, medium-toasted oak barrels. Maturation for up to 20 months was in a combination of new and seasoned French and American oak barrels.
