(2013 Vintage) As in the vines, fermentation time asked a lot of patience, tannins are extracted slowly after long days of maceration and punching. Fermentation is followed by a very LONG CUVAISON (about three weeks) before running off. BREEDING in oak casks for 20 months. The wrath of the park will soon be renewed at 100%. Diversification in the choice of coopers and casks of different ages can adapt the best breeding of each of our terroirs.
