Fermentation without use of yeast additives and maceration in open conical vats at controlled temperatures for 3 to 4 weeks. Aged in oak barrels for around 30 and 18 months in bottle
aromas of tobacco, leather, little cinnamon and clove, hint of cocoa. plum, mild tannins, mild acidity, medium body. a little overpowered by veal ala siciliana.
great bottle of wine, refined tannins, framed by cedar and truffles. delicious. had it at Francisco's house, 1/15/16.
