Connoisseurs' Guide to California WinesMondavi's basic Cabernet starts out well enough with attractive aromas of ripe cherries and fairly rich oak, but its simple flavors run afoul of blunting tannins, and its fundamental fruit is lost to tongue-drying astringency. In need of some five or more years of softening, it never finds a sufficiently fruity voice to convince us that it will age into beauty.
