(2010 Vintage) Inspired by Pomerol, our hillside hand tended vines are planted in rocky, dry soil, which results in low yields. Using all indigenous yeast, the wine is fermented on the skins for 45 days. Left unfined and unfiltered, it is then aged in custom 60 gallon French barrels, and finished with Cabernet Sauvignon. From 30 year old vines, this organic and sustainably farmed vineyard results in a wine that is a combination of complexity, depth, and smooth tannins. Fresh plum and bright morello cherry are dominant, with a subtle earthiness on the palate, and distinctive notes of cedar and cacao.
