(From 1996 Vintage) Each varietal of the Cain Vineyard is hand harvested, and vinified separately. The fruit is carefully destemmed, delivering a high proportion of whole berries directly to the tank. After a prolonged (two to four weeks) gentle maceration, the free run wine is drawn off. Connoisseurs' Guide to California Wines(From 1997 Vintage) 87% Cabernet Sauvignon; 11% Cabernet Franc; 1% Petit Verdot; 1% Malbec. Perhaps more properly labeled as "Four" rather than "Five" in its present version, Cain's prestige cuvee is a study in contrasts and earns high marks for its deep fruit, lavish oak and invitingly fleshy palatal feel. It is less laudable, however, for its persistent old bark and saddle-leather qualities, and it gets pushed just wide of recommendation by its abrupt, overtly drying finish.
