Winemaker's Notes

Our 2002 vintage Elivette is a deeply hued blend of Cabernet Sauvignon, Merlot and Cabernet Franc. The aromas are a heady complexion of raspberries, blackberry jam and dark chocolate with nuances of kola and dark spices. Over 22 months of aging in French oak has softened the tannins and shaped the wine into a lush and textural delight. Loaded with a concentration of jammy fruit and hints of black licorice, it is an opulent expression of our Bordeaux varieties as they come to full ripeness on the slopes of Spring Mountain.     When Jac Cole came to Spring Mt. in rsquo;01 he blended the selection from 110 vineyard blocks within the estatersquo;s three contiguous vineyards. The blend of the best lots is mostly Cabernet with 8% Merlot and a touch of Petit Verdot. My first notes on this wine were all about structure: its refinement, balance and harmony. And when leads with complete integration, its bound to be good. Slowly, over the course of a day this opens to a spiciness like black puer tea. The fruit remains tight, black as plum skin, but generous in its depth and texture. It all hangs together in a supple whole, to cellar for ten years or more.

The spotlight here is on extract and ripeness and size, but in the midst of all of its swagger, this heady wine surprisingly shows a saving sense of extracted curranty fruit.
