Grapes were hand picked at optimal maturity and crushed into stainless steel fermenting tanks. Fermentation lasted 7-10 days, with peak juice temperatures reaching 85°F. The must was gently pumped over/punched down 2-3 times per day to carefully extract aroma and flavor components. Pressed at dryness, the individual vineyard lots were transferred to a variety of barrels for malolactic fermentation and extended aging.     Rich oak and ripeness are met with a broad measure of sweet black cherry fruit first in the aromas and then in the deep, well-composed flavors of this solid, moderately full-bodied offering. There is a puckery edge of latter-palate tannins still to be resolved, but the wine's considerable fruit carries well even at the finish, and a wait of some four to six years seems the sure prescription for genuine success.
