A generously rounded palate structure with earthy tones and subtle vanilla from the oak. Some ripe berry and plum fruit adds to the middle palate flavour. Balanced acid and soft tannins enhance the lingering flavours on the finish. Oak maturation was 19 months in predominantly French barrels, 30% of which were new. The remainder were 2nd and 3rd fill French and Ameriacn oak.Cellaring potential is 8 to 12 years. Ideal food matches are game, red meats cooked both simply or with complex flavours , hearty vegetarian dishes and well flavoured firm cheeses.
