VARIETY:In the best years, Asinone is produced from 100% Sangiovese, otherwise we add about 10% Colorino and Merlot from the newer vineyards. SOIL TYPE:Soft clay, slightly skeletal. VINIFICATION: Fermentation takes place in stainless steel vats at a controlled temperature, with milling that includes repassing the must over the grape dregs. Fermentation and maceration take 20 - 25 days.
