Wine Description

(From 2006 Vintage) The 2006 CabernetSauvignon shows a great balance between fruit and structure. The wine’s multi-layered flavors represent both the sweet and the savory—cassis, dried bing cherry and huckleberry alongside grilled herbs, smoked meats anda touch of eucalyptus. The front and mid-palate are fruit-driven and lush, leading toward a more structured, textural finish, indicative of the age worthiness of this Cabernet. The Cabernet Sauvignon can be enjoyed with a myriad of dishes including Passion fruit Marinated Skirt Steak, Sweet Thai Style Rib Roast, grilled leeks, portobello mushrooms, beef dishes and blackberry sauce.

(From 2006 Vintage) The 2006 Chalk Hill Estate Chardonnay is creamy and complex, openingup to reveal multi-layers of intricate aromas and flavors as it breathes in the glass. Barrel fermented with native yeasts and bottled without fining or filtration, this wine experienced a gentle and natural progression from grape to bottle. Aromas of white flowers, ginger, and white peach preceed a slight flintiness and fresh cream.
