The ZD Napa Valley Cabernet Sauvignon once again shows our commitment to producing powerful yet balanced cabernets from some of the best vineyard sites in the Napa Valley. Each vineyard lot for this wine was hand harvested and fermented separately in small stainless steel open top fermentors. Hand punchdowns during fermentation ensured a gentle extraction of color and tannin. The lots were then barrel aged for about ten months after which our first blending trial tastings occurred. Once the final blend was made, the wine was returned to small American oak cooperage and aged for another 12-14 months. This cabernet is drinking beautifully now and will age gracefully for many years. The aroma is bursting with ripe cassis, blackberry, plum and a hint of lavender. This intense ripe fruit is complemented by subtle hints of clove, anise and sweet toasty vanilla. The palate is rich and round with silky tannins that envelope an intense core of fruit that carries through to an incredibly long finish.
Connoisseurs' Guide to California Wines(2005 Vintage) Likeable aromas of ripe cherries, creamy oak and creme de cassis are quickly joined by a faint but evident whiff of angularity, and that edginess reappears in the wine from mid-palate to finish. It might be possible for cellar aging to help the wine overcome its difficulties, but the risks are great.
