WINEMAKER'S NOTE
This "cuvée" is considered a "Jeunes Vignes" cuvée by the winery, renamed to evoke the gravelly soil of the Vienne and the calcareous parent rock and to take into account the ageing and maturing of these vines.
The vinification method here is similar to the Cuée Terroir, although the vines selected produce a greater density and complexity. The free run wine is used (natural flow-off the juice after alcoholic fermentation), which gives this wine a greater purity and finesse.
The press wine (obtained when the marc is pressed) is blended with the Cuvée Terroir. Only the highly qualitative press wines can exceptionnally be blended in this cuvée. All of these qualities give the Les Petites Roches cuvée a capacity to age for several years.
The great Chinon classic with rillettes (potted meat), crackling, poultry or fresh goat's cheese. More tannic and delicate, waiting a year after bottling would be ideal.
