A blend of sauvignon blanc and a small amount of semillon (10 percent) from mature vines at Mondavi's To Kalon Vineyard in Oakville, this wine ferments and ages in oak barrels. The scent of oak is primary in the young wine, balanced by plenty of passionfruit flavors that keep it mouthwatering. A meaty, complex white suited to bottle aging, this will match roast pheasant or guinea fowl.
