Appellation AmericaWaterstone Winery, started in 2000, is a collaboration between negociants Philip Zorn and Brent Shortridge. The German-born Zorn previously made wine at Sunny St. Helena, Gauer Estate, Paraiso Springs and Tria. Zorn made this Cabernet combining fruit from four different Napa Valley AVAs. The wine is showing sweet berry, some depth, balance, and restraint. It’s an excellent wine with lots of potential for aging perhaps as long as a dozen years. The grapes were hand-picked. Following destemming, the fruit was stainless steel-fermented and received extended skin contact before being read more...transferred to barrels. The wine was aged in French oak barrels for 18 months, 70 percent of which were new. The listed alcohol is 14.8 percent and there were a whopping 12,500 cases produced. Shortridge and Zorn also make Zinfandel for their Z-52 label. (hide)
