Interesting alternative to the standard foie gras pairing of Sauternes. This wine is late harvest/botrycized chenin blanc. Round and sweet with flavors of apricot and honey. A bit of oxidation gives it an interesting twist. Medium acids. Would also work with fruit desserts but is the perfect foil for foie gras's richness.
